Default Carb help

I need a carb pro. I know very little about carb mustangs since most of mine were post 85 models. But I bought a sweet 85 vert with 34 K on it. I had the carb rebuilt by a trusted mechanic. Here's the only mods I've done. Long tubes, off road, no cats. Hotter coil, Ford Racing plug wires.
I have a fuel smell, not real strong but I'm concerned. It was there before the carb rebuild. The car runs wonderful, smooth as silk all around. But the smell will not go away. The gas tank is solid no leaks there or any fuel lines.
I understand the computer controls the air/fuel and any adjustment screws are covered from the factory. Could it be dumping too much fuel since I've removed the cats and added the off road exhaust? Lastly would a new holley. 4160 bolt right on? Would I have to bypass the computer? Forgive the length of this post. Thank you for any help,
